Grain-Free Brown Butter Cinnamon Granola

So, I’ve gotten really into granola lately. I don’t know why I slept on it for so long, but I’ve recently come around. Now I’m a true granola stan. I love it as a snack, I love it with a nice nut milk, and I love it on top of yogurt with a few choice berries. And honestly, that’s just the tip of the iceberg when it comes to granola possibilities. Anyway, I’m a sensible person and quickly got sick of purchasing the expensive (read: good) stuff. So I decided to make my own.

I opted to make a grain-free granola, because who needs oats?! Oats are overrated. Instead, this stuff is loaded with delicious nuts and seeds. Seriously, it’s got cashews, chia seeds, pumpkin seeds, flax seeds, and hemp seeds. Plus some delicious coconut flakes to boot. Lots of healthy fats, fiber, protein, and calcium. In addition to all that healthy stuff, though, there’s a good amount of brown butter and maple syrup. Also cinnamon. Yum! Now flavor-wise, this granola isn’t super sweet. Which I like. If you prefer yours to be a little sweeter, though, simply add a little extra maple syrup! Personally, though, I like that this doesn’t try too hard to outdo fruit on sweetness. Because I’m obviously enjoying my granola bowls with a few sweet berries, too.

I will say that this might not be the best snacking granola, as it’s a bit crumbly. It’s absolutely delicious on top of some greek yogurt, though! Now without further ado, let’s jump into the recipe.

Grain-Free Brown Butter Cinnamon Granola

Ingredients

  • 1 cup Roughly chopped cashews
  • 1/2 cup Coconut flakes
  • 1/4 cup Unsalted pumpkin seeds
  • 3 tbsp Flax seeds
  • 3 tbsp Chia seeds
  • 3 tbsp Hemp seeds
  • 6 tbsp Butter
  • 2-3 tbsp Maple syrup (I used sugar free)
  • 1/2 tsp Salt
  • 1/2 tsp Cinnamon (Plus extra for dusting)

Instructions

  • Combine your nuts, seeds, and coconut flakes in a large bowl.
  • Preheat your oven to 350° Fahrenheit. Line a large pan with parchment paper and set to the side.
  • In a saucepan, cook the butter on medium-low heat for about 10 minutes, or until it's nicely browned and bubbly. Then remove from heat and add the maple syrup, salt, and cinnamon. Stir until combined.
  • Add the wet mixture to the dry ingredients and mix until everything's nicely coated. Then dump it all onto your large pan and spread it into an even layer. Put it in the oven for 20-25 minutes (stirring every 10 minutes or so), or until it's a nice golden brown. Then remove it from the oven and sprinkle with a bit more cinnamon (use your judgment here) before letting it cool. Make sure to mix it up with a spoon or spatula every so often, and you're done!
