Yogurt parfaits are a beautiful and healthy way to level up your breakfast game. They’re easy to throw together, and if done right they taste amazing! One of my favorite ways to add flavor to a yogurt parfait is to include roasted fruit. Roasting fruit intensifies its flavor and sweetness. It’s pure magic. Especially since (depending on the fruit) you get this flavor bomb without having to add sugar! For this yogurt parfait, I paired plain Greek yogurt with homemade granola and balsamic roasted strawberries. It’s easy to make, extremely customizable, and a delightfully balanced breakfast. I can’t recommend it enough.

Can I assemble these ahead of time?

While it may be tempting to assemble these parfaits ahead of time for a grab and go breakfast option, I would recommend leaving the components separate until you’re about ready to eat them. I tested pre-assembling one, and while it was definitely still tasty the next day, the granola did get soggy. If that sort of thing doesn’t bother you, assemble away. Package them in cute little jars and eat them on your way to work.

Personally, however, I prefer my granola to be crunchy. So I’d rather just scoop some strawberries, yogurt and granola into a bowl or a cup right before eating. But the choice is yours.

What kind of granola should I use?

This recipe was developed to be used with my vegan almond and apricot granola. It’s spiced with cinnamon and cardamom, and packed with oats, almonds, hemp hearts, chia seeds, and dried apricots. There’s a bit of maple syrup for some sweetness, and some coconut oil that just brings it all together. It’s ridiculously easy to make, and so worth it. That said, if making granola isn’t your thing, that’s fine! Use whatever granola you like best. I would try and stick to a similar flavor profile, but store bought is totally fine.

What type of yogurt should I use?

I recommend using plain full fat Greek yogurt. If you’re watching your cholesterol, you can substitute it for a Greek yogurt with a lower fat content, but I find that fat free versions typically taste very tart. I wouldn’t recommend using a flavored yogurt here, as it’s just not necessary. The roasted strawberries and granola will provide more than enough flavor. Plus, flavored yogurts are full of unnecessary sugar, so if you’re looking to enjoy a healthy breakfast, it’s best to stick with plain yogurt.

Ok, let’s talk measurements.

This is not a recipe that requires exact measurements. It’s just not. I’m sorry if that upsets you, but honestly, when was the last time you measured out ingredients for a yogurt parfait (or yogurt bowl)? So yeah, let’s just say this recipe will make between 6 and 8 servings on average.

Balsamic Roasted Strawberry Yogurt Parfait

Ingredients

  • 1 1/4 lb Strawberries 1 lb Halved, 1/4 lb sliced or diced
  • 3 tbsp Balsamic vinegar
  • 32 oz Greek yogurt
  • 5 cups Granola

Instructions

  • Preheat your oven to 350° Fahrenheit and line a rimmed baking sheet with parchment paper or a reusable baking mat.
  • Add 1lb strawberries and balsamic vinegar to the prepared baking sheet. Toss to coat and then roast for about 20 minutes, tossing after 10 minutes. You'll know they're ready when they're soft and saucy. Let cool to room temperature before storing in an airtight container in the refrigerator (if not immediately using).
  • In a bowl, jar, or cup, layer roasted strawberries, granola, and yogurt (I used about a half a cup per serving). I like to start with granola, then add a couple spoonfuls of roasted strawberries, then yogurt, followed by more granola and more roasted strawberries. Finally, top it off with some sliced or diced strawberries. Repeat this process for as many servings as you're making right now and enjoy!

Notes

This recipe should make between 6 and 8 servings. The amounts you include in each are totally up to you, so obviously your mileage here will vary. 
I prefer to make one serving at a time, but if you’d like to prepared multiple ahead of time you can go ahead and do so. Just be aware that the granola will get soggy.
