Brioche Toast with Whipped Feta, Cucumbers and Hot Honey

This year, I’ve got two cucumber plants in my garden. They’re happy little dudes, which means I’ve got a ton of cucumbers to use up. I’ve been throwing them in salads like there’s no tomorrow, but I wanted to create a simple, yet delicious cucumber centric recipe for you guys. Honestly, I’ve still got tons of cakes coming in, so I might have to create a few cucumber centric recipes. This first one, however, is a brioche toast with whipped feta, cucumbers and hot honey.

Funnily enough, I’ve used the whipped feta hot honey combo before. It was for one of my very first blog posts, which was a baked whipped feta dip recipe. I clearly liked how it turned out, because the pair has stuck with me.

What is hot honey?

Hot honey is basically honey that’s been infused with chiles, resulting in a slightly spicy honey! It’s a delicious condiment and I highly recommend it, whether for this or other culinary endeavors. They actually sell a hot honey at Trader Joe’s now (though they call it “Organic Spicy Honey Sauce”), which is super convenient. That’s what I used for this recipe. I’ve also seen other hot honeys for sale on Amazon, though I haven’t tried them. If you don’t have access to a store bought hot honey, or simply feel like making your own, I’ve got you covered. My hot honey recipe is very old, so you’ll have to excuse the ugly photography (I’ll get around to reshooting it one day). The recipe holds up, though! I used jalapeños, but feel free to use whatever chiles you like.

Word of warning regarding the whipped feta:

I feel like I should note that this makes way more whipped feta than you’ll need for a serving or two of this toast. I wrote the toast recipe for a single slice, as I think that makes the most sense for this type of dish. That said, I would estimate it’d be good for about eight servings. It holds up great in the fridge, so congrats on your week of delicious breakfasts!

Brioche Toast with Whipped Feta, Cucumbers and Hot Honey

Ingredients

Whipped Feta

  • 6 oz Feta cheese
  • 1 tsp Lemon zest
  • 1 clove Garlic (Minced)
  • 1 tsp Olive oil
  • 1/2 cup Greek yogurt
  • Salt (To taste)
  • Freshly ground black pepper (To taste)

Cucumber toast

  • 1 slice Brioche bread
  • 2 tbsp Whipped feta
  • 1 Persian cucumber (Thinly sliced)
  • Hot honey (To taste)
  • Flaky sea salt (I like Maldon) (To taste)
  • Freshly ground black pepper (To taste)

Instructions

  • Make the whipped feta! To do this, add all the ingredients to a food processor or blender and pulse until smoothe and fully combined.
  • Toast a slice of brioche bread, either in a pan, toaster oven, or traditional toaster.
  • Spread about 2 tbsp whipped feta onto the toasted brioche. Then cover the whole thing in cucumber slices. Top with hot honey, flaky sea salt and freshly ground pepper (to taste), and eat immediately!

Truth be told, the whipped feta is more of a recipe than the cucumber toast. But there are a million whipped feta recipes out there. My goal with this was really to make sure I gave you a way to use it!
