Carrot Moscow Mule (Ginger Beer with Vodka and Lime)

I’ve loved carrot juice for as long as I can remember. That’s probably an unpopular opinion, but I don’t care. I’ll shout it from the rooftops. It’s one of those super sweet juices that somehow still feels like a healthy choice. And god is it refreshing. Recently, though, it occurred to me that carrot juice in cocktails is rare at best. I think I’ve had a carrot based cocktail once, which is ridiculous if you ask me. So I set out to make one. I knew I wanted to keep it simple, because I am a merciful creature. Since carrot and ginger go great together, I figured adding carrot juice to a Moscow Mule might be the move. It was lovely. This is one of those drinks you can play around with. Want a spicier drink? Add more ginger beer! Looking for something a bit sweeter? Throw some more carrot juice in there. A bit more zest? Go heavier on the lime juice. I have a sneaking suspicion that orange juice would be lovely in this as well, but that felt more like a spiked juice than a cocktail with a unique juice spin if that makes any sense.

Do I have to juice my own carrots?

Nope! I concocted this drink with simplicity in mind, so you absolutely do not. You can find carrot juice in plenty of grocery stores (I got mine at Trader Joe’s). It’s usually located in the refrigerated juice section.

Let’s talk garnishes.

I love a good garnish. While you definitely can go garnish free here, I for one enjoy having a nice little snack in my drink. Feel free to get creative. Candied ginger would make an awesome garnish, as would a small lime wedge. I opted for dramatic carrots in mine. I happened to have some purple carrots, so I peeled one using a vegetable peeler and then threaded it onto a toothpick. It’s an easy task that yields a very fun product. I also threw a small carrot into each drink for good measure. Because sometimes I like to feel like Bugs Bunny when I’m sipping on my night cap.

Carrot Moscow Mule (Ginger Beer with Vodka and Lime)

Ingredients

  • 4 oz Vodka
  • 2 oz Carrot juice
  • 2 oz Ginger beer
  • 1 Lime

Optional

  • Ice
  • Candied ginger
  • Carrot strips/carrots

Instructions

  • If using, add ice to two cocktail glasses. Then add 2 oz vodka, 1 oz carrot juice, 2 oz ginger beer, and a squeeze of lime juice to each glass and stir to combine. Garnish as you see fit (I included candied ginger and carrots in the optional section for this purpose, but feel free to get creative here)!
