Frozen Strawberry Rhubarb Margaritas

Margaritas are a quintessential summer drink. Typically, a margarita consists of lime juice, tequila and orange liqueur. This version contains all of those things, but also includes fresh strawberries and rhubarb simple syrup. I’m a big fan of fruity drinks, so adding strawberry and rhubarb to this one just felt like the perfect way to celebrate summer! I also have a lifelong love of frozen drinks, so I opted for a blended version. Oh, and despite being a fruity drink, this isn’t overly sweet. So unless you’re drinking a whole lot, you probably won’t have to worry about a gnarly sugar induced hangover.

What if I don’t like frozen margaritas?

If you prefer your margaritas on the rocks, you can definitely make that work. But if that’s the case, you may want to opt for another recipe. I’m honored that you’re here, I really am! But I haven’t tested an unfrozen version of this drink. I’m sure muddled or puréed strawberries would be delicious. You could also make a strawberry rhubarb simple syrup rather than a rhubarb one. Either of those options would probably be delicious. But again, if you’re looking for something tried and true, you’ll need to look elsewhere.

How many will this make?

I mean… that kind of depends on the size of your cups. I got a heaping pitcher out of it, though. Like, filled to the brim. I’d say you’ll get anywhere from 6-8 servings out of this recipe.

Can I save some for later?

Sure can! I was by no means going to drink an entire pitcher of this stuff in one sitting, so I transferred the excess to a freezer safe Tupperware and popped it in the freezer for later. I was a little afraid that it would be too hard to serve after a day or two, but it ended up being no trouble at all. It might look a bit more like a granita than a margarita after spending some time in the freezer, but it’ll thaw to the perfect consistency within minutes.

Frozen Strawberry Rhubarb Margaritas

Ingredients

Rhubarb Simple Syrup

  • 2 cups Granulated sugar
  • 2 cups Rhubarb (Chopped)
  • 2 cups Water

Strawberry Rhubarb Margaritas

  • 1 1/2 cups Tequila blanco
  • 1 cup Lime juice (Freshly squeezed)
  • 3/4 cup Cointreau
  • 1/4 cup Rhubarb simple syrup
  • 2 cups Strawberries (Roughly chopped)
  • 4 cups Ice

Instructions

  • Make the rhubarb simple syrup. To do this, add the water, chopped rhubarb and sugar to a medium saucepan and bring to a boil stirring occasionally. Once it's hit a boil, reduce heat and simmer for about 20 minutes. Remove from heat and let cool before straining. You'll have extra, and it'll keep in an airtight container in the fridge for a couple of weeks!
  • Now make the margaritas. To do this, add the tequila, cointreau, lime juice, strawberries, ice, and 1/4 cup of rhubarb simple syrup (or more, if you'd like a sweeter drink) to a blender. Blend until smooth and enjoy!
