Minty Roasted Cherry Limeade Coconut Popsicles

When I was a kid, I loved getting cherry limeade from Sonic. We didn’t have them in Florida, so it was sort of my special treat when we’d go on trips to visit my grandparents in Kansas. I’ve since realized that Sonic’s cherry limeade is absolute garbage, but the flavor combo holds up! So I decided to build a popsicle around it.

I went with a coconut milk base, because it’s rich and creamy but also dairy free. Maybe it’s just me, but I don’t love cold dairy-based treats when it’s scorching hot outside. I also thought the flavors would work really well together, which I was totally right about. Though it’s an extra step, I opted to road the cherries before adding them. I love a roasted fruit situation, as it tends to add more depth and richness than raw fruits do. It also releases some beautiful juice, which is always a plus when you’re making popsicles. Oh, and fresh mint. Because it’s delicious with literally all of the things I just talked about.

There’s one thing that we should discuss, and that’s cherry distribution. You have a few different options here. I went for a cherry heavy tip, because I thought it’d look cool. That’s the simplest method here, as it literally just involves adding the cherries to the popsicle mold and then pouring the liquid in. If you’d like a more even distribution however, you could add a few cherries to each mold, then add fill it halfway with liquid before freezing it. Once it’s solidified, add more cherries and liquid and put it back in the freezer. Finally, if you’re not into chunks, throw the cherries and the liquid in the blender before pouring it into the molds! You’ll end up with a super smooth and evenly distributed popsicle. And it’ll be pink, which is never a bad thing in my opinion. I personally liked the idea of little bursts of flavor, but there’s really no wrong way here.

Vegan Minty Roasted Cherry Limeade Coconut Popsicles

Ingredients

  • 2 cans Coconut milk
  • 6 tsp Honey or Agave (I used manuka because it's lower in carbs, but use whatever kind you'd like!)
  • 2.5 cups Cherries Halved and pitted
  • 1/2 cup Chopped mint Fresh is best here
  • 4 Limes (Just the juice)

Instructions

  • Preheat your oven to 400° F, then put your pitted and halved cherries on a parchment paper lined baking sheet.
  • Once the oven is preheated, put the cherries in for 10-15 minutes until soft and juicy.
  • While the cherries are roasting, add all the other ingredients to a bowl and whisk to combine.
  • Once the cherries are done, add the to your popsicle molds (or see the note above photos for alternate options). Then pour the liquid into the molds. Add sticks and the lid (your popsicle mold should include a lid that'll hold the sticks in place), and put in the freezer for at least 4 hours or until totally frozen.

And that’s it! While a relatively simple recipe, these popsicles will require some patience (y’know, because they need to freeze). So I’m sorry about that. But in no time at all you’ll be enjoying delicious and healthy(ish) popsicles that’ll shield you from the demonic heat of the summer. So that’s certainly something to celebrate.
