Do you remember that scene from The Parent Trap where one Lindsay Lohan told the other Lindsay Lohan that she liked to eat her Oreos with peanut butter and then the second Lindsay Lohan was like omg no way, me too?! (Sorry – that sentence was a lot, but if you know you know!) Well, I do. Vividly. I remember trying it as a kid and thinking it was delightful. And it makes sense. Chocolate and peanut butter are a tried and true combination. The addition of a creme filling sounds delicious. Anyway, I’ve wanted to use this flavor combo in a recipe for quite some time now. I waffled between doing it with brownies or blondies, but in the end brownies won. Why? I just like them more. And I wanted to play up the chocolate and peanut butter of it all. While I’m sure the blondies would’ve been good too, these Oreo and peanut butter brownies are pure magic. You absolutely need them in your life.

Swirly topped brownies can be intimidating. Trust me, though, these are so easy to pull off. In an effort to demystify the process, I made a video that quickly walks you through it.

See? Super easy. Simply spoon globs of your peanut butter mixture onto your brownie batter and then swirl with a toothpick until you’re satisfied with how it looks. If you’re worried about it, start with less peanut butter and add more as you see fit. That said, the mixture isn’t too runny, so it’s very forgiving. Let’s talk ingredients.

I just want to address a few things here. Firstly, the Oreos. I used originals, but frankly, I don’t care how stuffed they are. That’s up to you. I would stick to the original flavor, but that’s really my only note. As for actual Oreos vs generic brands, you do you. If there’s a generic brand you like, feel free to give it a go.

Regarding peanut butter, I prefer a smooth peanut butter with no added sugar (we’ll be adding enough as it is) and minimal salt. But again, use the peanut butter that you like.

Finally, chocolate. This recipe calls for semi-sweet chocolate chips. I think that it pairs best with peanut butter. The chips are also less work than bars because you don’t have to do any chopping. If you’re into dark chocolate, you’re welcome to play with the ratios or just use it in place of semi-sweet. But I will say that my vision for this recipe was a little sweeter, and the semi-sweet chips suited it perfectly.

On measurements:

When baking, best practice is to use a scale. That’s not really the American way, though, so this recipe is written for a basic American kitchen. If you have a scale you should totally use it, but it’s not required. If you opt not to weigh your ingredients, however, make sure not to scoop flour directly into a measuring cup. Instead, spoon it into the cup and then level it with a knife. This will help ensure that you don’t use too much.

Oreo and Peanut Butter Brownies

Ingredients

Brownie Batter

  • 14 tbsp Unsalted butter 8oz
  • 9 oz Semi-sweet chocolate chips
  • 2/3 cup Granulated sugar 133g
  • 2/3 cup Light brown sugar 135g
  • 3 Large eggs, along with 1 yolk (Save the extra white for a cocktail or toss it.)
  • 3/4 cup All purpose flour 96g
  • 1/3 cup Dutch processed cocoa powder 40g
  • 1/2 tsp Salt 2.8g
  • 1/2 cup Oreos (Roughly chopped)

Toppings

  • 1 cup Creamy peanut butter 250g
  • 1/2 cup Powdered sugar 50g
  • 2 tbsp Unsalted butter 1oz (Softened)
  • 7 Oreos (Give or take, but this is what I used)

Instructions

  • Preheat the oven to 400°F. Grease a 9" square baking pan and then line it with parchment paper.
  • Using a double boiler, melt the butter and baking chocolate together, mixing every so often. Once it's fully melted and combined, remove it from heat and set it aside to cool to room temperature.
    Note: if you don't have a double boiler, you can make an impromptu version by placing a heat proof bowl over a pot of boiling water. Just make sure the water doesn't touch the bowl.
  • Using an electric mixer, whisk together the 2/3 cup granulated sugar, 2/3 cup light brown sugar, and 3 full eggs, along with an extra yolk on medium speed. You'll know it's done when it's light and creamy.
  • Add the chocolate sauce to the sugar and eggs and stir to combine.
  • Gently mix in the cocoa powder, flour, and salt. Stop mixing once combined.
  • Fold in the chopped Oreos. Then pour the brownie batter into your greased and lined pan.
  • In a small bowl, whisk together 1 cup peanut butter, 2 tbsp softened butter, and 1/2 cup powdered sugar until smooth. Then spoon globs onto the top of your brownie batter. Create swirls using a toothpick. Then gently lay Oreos atop the batter. I used 5 full cookies and 2 roughly chopped ones but feel free to get creative here.
  • Bake for 25-27 minutes, or until the middle is a bit wobbly. They might seem underbaked, but this is actually ideal if you're after a perfectly fudgy texture. They'll also continue to firm up as they sit.
  • Once done, let cool to room temperature and then slice into 16 equal pieces (go bigger or smaller if you'd like).

Notes

Store leftover brownies in an airtight container in the fridge or at room temperature. They’ll keep for a few days.
