My Favorite Persimmon Caprese Sandwich (Easy and Delicious)

Are you a caprese sandwich fan? I live for them. I’ve never been big on lunch meat, so once I discovered this cheesy sandwich there was no turning back. But do you know what I think I love even more than a traditional caprese sandwich? A persimmon caprese sandwich. Persimmons are an absolute delight. They’re ultra seasonal, so when they’re around it’s important to eat them as often as possible. They have a mild but sweet flavor, and are fairly hard, which in my opinion makes them more suitable for sandwiches than tomatoes. I said what I said.

What’s in this persimmon caprese sandwich?

This persimmon caprese sandwich only contains a few ingredients.

  • Baguette
  • Fuyu persimmons
  • Burrata
  • Pesto
  • Balsamic glaze

So as is often the case with minimal dishes, it really helps to use quality ingredients.

What kind of persimmons should I use here?

If you’re not already aware, there are two main types of persimmons. Fuyu persimmons are sweet and can be eaten while firm. Hachiya persimmons, however, must be extremely soft before they’re eaten. They’re very sweet at that point, but if you try and eat them before then, they’re very strarchy and don’t taste great.

For this persimmon caprese sandwich, I would suggest using fuyu persimmons. They hold up so nicely in a sandwich and are a great size for a baguette when sliced. If you decide to use hachiya persimmons instead, definitely wait until they’re nice and soft. I’m sure it’ll still taste nice. That said, don’t expect it to hold together as well.

What kind of pesto should I use?

Any pesto genovese will work great here. You can totally use store bought if you’d like. If you want to go the extra mile, however, I suggest making your own. I really love my homemade pesto recipe. It makes more than you’d need for this sandwich, but it’s legitimately good on everything. Eggs, pasta, toast, you name it. You definitely won’t regret having it around.

A note on baguettes.

To make this, I used one extremely long baguette. It was about 20 inches. I then cut it into two 10 inch pieces and used those for my two sandwiches. You can decide whether you want to use one enormous baguette or two more reasonably sized ones. Either way, you’ll end up with two sizeable portions.

Persimmon Caprese Sandwich

Ingredients

  • 1 20 inch baguette (Or two 10 inch baguettes)
  • 4-6 tbsp Pesto
  • 2 Fuyu persimmons Sliced
  • 8 oz Burrata Quartered if one ball, halved if 2
  • Balsamic glaze to taste

Instructions

  • Cut your baguette in half. Then halve both sides lengthwise. Spread 2-3 tbsp of pesto onto the 2 bottom slices. Then add sliced persimmons, followed by burrata, and finally balsamic glaze to taste. Add the top slices and enjoy!
