Individual Fluffy Herbed Goat Cheese Soufflés

Valentine’s Day is right around the corner, and since 2021 is basically just an extension of 2020, you can count on it being pretty mellow. Normally, Ben and I would go out for an overpriced prix fixe meal. This year, however, options in many places will include a fancy to go meal, or a DIY situation. If you’re going with the latter, I’ve got you covered with these cute little herbed goat cheese soufflés!

I know there’s a good chance that you read the word soufflé and immediately checked out. And I get that. They definitely have a reputation for being finicky and difficult. But I promise you this dish is actually quite approachable! It requires minimal active cooking time, which is great in my book. There’s also very little prep work required. Seriously – it’s just mincing herbs and grating a bit of cheese.

What should you eat it with?

As for the rest of the meal, this would go great with some salad and a rich, chocolatey dessert. It’s also lovely with wine. I paired this soufflé with 90+ Cellars Lot 75 Pinot Noir, which was just divine.

Cooking notes:

I really wasn’t kidding when I said that this dish was super simple. That said, if you don’t have any 8oz ramekins or baking dishes, you should go ahead and order some now. I bought mine off Amazon. They’re cheap, oven safe, and perfect for dishes like this. And as an added bonus, they’re excellent for mise en place (that’s basically when you pre-prep and portion out all your ingredients before you start cooking)!

Oh, also, you’ll want to serve these immediately after they come out of the oven. They deflate really quickly, and while they’ll taste fine deflated, they won’t be nearly as impressive. I will say that these actually do hold up well in the fridge. They’re not going to be puffy delights when you pull them out (for lunch the next day, if you’re me), but they’ll still taste great.

Herbed Goat Cheese Soufflés

Ingredients

  • 4 tbsp Butter (plus a bit extra to grease ramekins)
  • 1/2 cup Finely grated parmesan cheese
  • 4 tbsp All purpose flour
  • 1 cup Whole milk
  • 1/2 tsp Salt
  • 1/4 tsp Freshly ground black pepper
  • 4 Large eggs
  • 8 oz Goat cheese
  • 1 tbsp Minced green onions or chives
  • 1 tbsp Minced thyme
  • 1 tbsp Minced parsley

Instructions

  • Preheat oven to 350°F. Butter 4 8oz ramekins and then sprinkle a bit of parmesan into each (reserve about half the parmesan for later). Put the ramekins on a baking sheet and set aside for later.
  • Melt 4 tbsp butter in a saucepan over medium heat. Then add 4 tbsp flour and whisk to combine. Cook for a few seconds and then add the milk, whisking to combine as you go. Keep stirring until the mixture thickens and comes to a boil. This should only take a couple of minutes. Then remove from the heat, stir in the salt and pepper and set to the side.
  • Break the eggs into a bowl and beat with a fork. Next, add the herbs and crumble in the goat cheese. 
  • When the thickened sauce has cooled, add the eggs, herbs and goat cheese to the mix and quickly and carefully whisk to combine. Once this mixture is smooth, pour it evenly into the 4 ramekins and put the ramekins and baking sheet in the oven for 25-35 minutes, or until it’s puffed up quite a bit. Broil on high for 3-5 minutes, or until the top is a nice golden brown hue and serve immediately! (Seriously – these babies will deflate FAST. You can totally save extras for later in the fridge. They’ll still taste delicious, but they’ll definitely look a little sad.)

    Ok, *finally* did these and yay! I didn’t get a lot of height but suspect I let the milk mixture cool too much? No idea, I don’t bake. Or should I did *didn’t* bc we will 100% be doing this for every future event ever. We only had three for dinner and I didn’t want to math, so my husband took the extra for lunch today and was v happy with the leftover.
