Refreshing Peaches with Lavender Whipped Cream

Once upon a time a blogger named Kirby got a little carried away with stone fruit recipes. She tried to space them out so as not to bore readers, but summer came and went and she still had one peach recipe left. It was kind of a bummer, but the recipe would just have to go unused. But then, in early October she found a bunch of peaches at the grocery store! So she figured screw it, if the produce was available, her recipe for peaches with homemade lavender whipped cream might as well be too!

Ok, I’m gonna drop the third person bit now. God that was annoying to write out. Anyway, when I made this it was the dead of summer. It made for such a delightful and refreshing dessert (though it’d also fully qualify as a snack) in that scorching heat. Now I realize that it’s technically fall, but at least here in LA it’s still over 100° Fahrenheit on the regular. So if that’s the case for you, you might need this in your life.

The recipe is quite simple. The peach portion is literally just sliced or chopped peaches. It’s the lavender whipped cream that sets it apart! It’s basically my take on a classical peaches and cream, except I spruced it up a bit.

A note on the whipped cream

If you’ve never made whipped cream from scratch, you’re in for a real treat. It’s way better than the stuff in the can, and it’s surprisingly easy to make! Plus, you can flavor it however you’d like! All you need is a stand or hand mixer, heavy whipping cream, a little sugar, and vanilla extract.

For this, I also added lavender because there’s just something so nice about a creamy floral treat. There are two different ways you can add in that subtle lavender flavor. If you have lavender extract, you can just use that. I know that that’s not exactly a pantry staple, though. So if you have dried (or fresh) lavender, you can also use that! Just be aware that doing so adds an extra couple of steps, as you’ll need to cook the lavender in heavy cream and then let it cool in the fridge for a while before making the whipped cream.

Refreshing Peaches with Lavender Whipped Cream

  • Stand or hand mixer

Ingredients

  • 2 Peaches (Sliced or chopped)
  • 1 cup Heavy whipping cream (You may want about a half cup extra if you're using dried or fresh lavender instead of extract!)
  • 1 tsp Lavender extract or dried/fresh lavender
  • 1 tsp Vanilla extract
  • 2 tbsp Sugar (Confectioners may be better here but granulated will work just fine)
  • A pinch Fresh lavender to garnish (Optional)

Instructions

  • Throw a mixing bowl and the whisk attachment(s) for your mixer in the freezer for about 20 minutes. Your whipped cream will come together much easier if these things are very cold!
  • If you're using fresh or dried lavender, bring that and the heavy whipping cream to a boil in a small pot. Then decrease the temperature and let it simmer for about 20 minutes. Once that's done, run it through a strainer and put it in a bowl or cup and let it cool down in the freezer. Once again, you'll want everything to be quite cold, so this might take a while.
  • Add the heavy cream, vanilla and lavender extracts (if using), and sugar to the frosty bowl. Apply the whisk attachment and whisk on medium high speed until medium peaks form. This is somewhere between loose and stiff peaks. If you're not sure what that means, when you turn the mixer off and lift the whisk out of it, the whipped cream on it should hold its shape nicely. You can use the whipped cream immediately or store it in the fridge for about a day!
  • To serve, divide the peach slices into 4 bowls or plates and top with a dollop of whipped cream. You can pipe it if you want, but I for one am ok with a more rustic feel. Sprinkle a bit of fresh lavender on top of each one if you've got it, and you're done!

Like I said, this recipe is real simple, but the homemade lavender whipped cream will blow the canned (and lavender free) version out of the water. If you end up making this, let me know in the comments or on Instagram!
