Super Simple Cinnamon Croissant French Toast

Mother’s Day is coming up. To celebrate, I thought a dad friendly breakfast recipe was in order. Y’know, because breakfast in bed and all that. In truth, I think the term dad friendly is a little silly. I mean my own husband is a fantastic cook. But I guess that’s not always the case. Regardless, French toast was always something that my dad made for us growing up. He usually made it on Saturday mornings with leftover challah from our Shabbat dinner the night before. And while I still think challah French toast is one of this dish’s greatest variations, I decided to go a different direction this time around. I mean you’ve already seen the title of the post, so this shouldn’t be shocking, but it’s croissant French toast.

So like, do I just slice a croissant in half then?

I mean you could do that. But I recently discovered that Trader Joe’s has a cinnamon croissant loaf and I’m absolutely obsessed with it. It’s like a loaf of sliced sandwich bread, only it’s a giant cinnamon croissant. It’s really fantastic for toast, but even better for French toast. So yeah, I highly recommend using that (and the ingredient list will reflect that). If you don’t have a Trader Joe’s nearby, consider moving. Ok fine, I’m kidding. If you don’t live near a Trader Joe’s, you can use any old croissant. Just slice it in half lengthwise so that the flaky interior can soak up that eggy goodness. Oh, and dust with cinnamon after cooking becaue the Trader Joe’s loaf is quite flavorful and doesn’t require any spice additions.

Let’s talk toppings.

Toppings are an important part of any fancy French toast experience. I used sliced bananas, raspberries, and blueberries because I am a fruit fanatic, and I thought that was perfect. That said, feel free to mix it up fruit-wise! Other topping ideas include vanilla ice cream, homemade whipped cream, or chocolate/caramel sauce. Powdered sugar is also never a bad idea. Oh, and maple syrup is essential. If you’re trying to have a productive day after eating this, I recommend sticking with fresh fruit. Otherwise, go wild. The beauty of this dish is that it tastes amazing while also being one of the easiest things you could possibly make, so it’s hard to go wrong.

A word on servings.

I made this recipe to serve two adults. If you’ll be serving more than that, you’ll have to do a bit of math. Thankfully it’s probably the easiest math you’ll ever do! If you’re serving this to small children, they may only need one slice of French toast, so plan accordingly. Something tells me that if that’s the case you know the drill, though.

Super Simple Cinnamon Croissant French Toast

Ingredients

  • 2 Large eggs
  • 1/8 cup Milk
  • 1/4 tsp Vanilla extract
  • 4 slices Cinnamon croissant bread (From Trader Joe's – scroll back up if you only have regular croissants!)
  • 2 tbsp Unsalted butter

Toppings

  • 1 Banana (Sliced)
  • 10ish Raspberries
  • 10ish Blueberries
  • Maple syrup (To taste)

Instructions

  • Add the eggs, milk and vanilla to a pie plate or large rimmed plate and whisk to combine. Dip the bread slices into the egg mixture, making sure to coat both sides.
  • Add 1 tbsp butter to a large frying pan over medium heat. Then add 2 slices of croissant bread and cook until golden brown on both sides (flipping half way through). Repeat with the remaining two slices (unless your pan is really big, in which case you can do it all at once).
  • Divide onto two plates and top with bananas, raspberries and blueberries! You can adjust amounts as you see fit. Then top with maple syrup and serve immediately.

And that’s it! Specialty bread aside, this cinnamon croissant French toast really is so incredibly quick and easy. And so delicious. Like, I knew it’d be good but I was beyond pleased with just how good it was. I hope you love it as much as I did!
