Oreo and Peanut Butter Brownies

Ingredients

Brownie Batter

  • 14 tbsp Unsalted butter 8oz
  • 9 oz Semi-sweet chocolate chips
  • 2/3 cup Granulated sugar 133g
  • 2/3 cup Light brown sugar 135g
  • 3 Large eggs, along with 1 yolk (Save the extra white for a cocktail or toss it.)
  • 3/4 cup All purpose flour 96g
  • 1/3 cup Dutch processed cocoa powder 40g
  • 1/2 tsp Salt 2.8g
  • 1/2 cup Oreos (Roughly chopped)

Toppings

  • 1 cup Creamy peanut butter 250g
  • 1/2 cup Powdered sugar 50g
  • 2 tbsp Unsalted butter 1oz (Softened)
  • 7 Oreos (Give or take, but this is what I used)

Instructions

  • Preheat the oven to 400°F. Grease a 9" square baking pan and then line it with parchment paper.
  • Using a double boiler, melt the butter and baking chocolate together, mixing every so often. Once it's fully melted and combined, remove it from heat and set it aside to cool to room temperature.
    Note: if you don't have a double boiler, you can make an impromptu version by placing a heat proof bowl over a pot of boiling water. Just make sure the water doesn't touch the bowl.
  • Using an electric mixer, whisk together the 2/3 cup granulated sugar, 2/3 cup light brown sugar, and 3 full eggs, along with an extra yolk on medium speed. You'll know it's done when it's light and creamy.
  • Add the chocolate sauce to the sugar and eggs and stir to combine.
  • Gently mix in the cocoa powder, flour, and salt. Stop mixing once combined.
  • Fold in the chopped Oreos. Then pour the brownie batter into your greased and lined pan.
  • In a small bowl, whisk together 1 cup peanut butter, 2 tbsp softened butter, and 1/2 cup powdered sugar until smooth. Then spoon globs onto the top of your brownie batter. Create swirls using a toothpick. Then gently lay Oreos atop the batter. I used 5 full cookies and 2 roughly chopped ones but feel free to get creative here.
  • Bake for 25-27 minutes, or until the middle is a bit wobbly. They might seem underbaked, but this is actually ideal if you're after a perfectly fudgy texture. They'll also continue to firm up as they sit.
  • Once done, let cool to room temperature and then slice into 16 equal pieces (go bigger or smaller if you'd like).

Notes

Store leftover brownies in an airtight container in the fridge or at room temperature. They'll keep for a few days.
