Herbed Goat Cheese Soufflés

Ingredients

  • 4 tbsp Butter (plus a bit extra to grease ramekins)
  • 1/2 cup Finely grated parmesan cheese
  • 4 tbsp All purpose flour
  • 1 cup Whole milk
  • 1/2 tsp Salt
  • 1/4 tsp Freshly ground black pepper
  • 4 Large eggs
  • 8 oz Goat cheese
  • 1 tbsp Minced green onions or chives
  • 1 tbsp Minced thyme
  • 1 tbsp Minced parsley

Instructions

  • Preheat oven to 350°F. Butter 4 8oz ramekins and then sprinkle a bit of parmesan into each (reserve about half the parmesan for later). Put the ramekins on a baking sheet and set aside for later.
  • Melt 4 tbsp butter in a saucepan over medium heat. Then add 4 tbsp flour and whisk to combine. Cook for a few seconds and then add the milk, whisking to combine as you go. Keep stirring until the mixture thickens and comes to a boil. This should only take a couple of minutes. Then remove from the heat, stir in the salt and pepper and set to the side.
  • Break the eggs into a bowl and beat with a fork. Next, add the herbs and crumble in the goat cheese. 
  • When the thickened sauce has cooled, add the eggs, herbs and goat cheese to the mix and quickly and carefully whisk to combine. Once this mixture is smooth, pour it evenly into the 4 ramekins and put the ramekins and baking sheet in the oven for 25-35 minutes, or until it’s puffed up quite a bit. Broil on high for 3-5 minutes, or until the top is a nice golden brown hue and serve immediately! (Seriously - these babies will deflate FAST. You can totally save extras for later in the fridge. They’ll still taste delicious, but they’ll definitely look a little sad.)
