Balsamic Roasted Strawberry Yogurt Parfait

Ingredients

  • 1 1/4 lb Strawberries 1 lb Halved, 1/4 lb sliced or diced
  • 3 tbsp Balsamic vinegar
  • 32 oz Greek yogurt
  • 5 cups Granola

Instructions

  • Preheat your oven to 350° Fahrenheit and line a rimmed baking sheet with parchment paper or a reusable baking mat.
  • Add 1lb strawberries and balsamic vinegar to the prepared baking sheet. Toss to coat and then roast for about 20 minutes, tossing after 10 minutes. You'll know they're ready when they're soft and saucy. Let cool to room temperature before storing in an airtight container in the refrigerator (if not immediately using).
  • In a bowl, jar, or cup, layer roasted strawberries, granola, and yogurt (I used about a half a cup per serving). I like to start with granola, then add a couple spoonfuls of roasted strawberries, then yogurt, followed by more granola and more roasted strawberries. Finally, top it off with some sliced or diced strawberries. Repeat this process for as many servings as you're making right now and enjoy!

Notes

This recipe should make between 6 and 8 servings. The amounts you include in each are totally up to you, so obviously your mileage here will vary. 
I prefer to make one serving at a time, but if you'd like to prepared multiple ahead of time you can go ahead and do so. Just be aware that the granola will get soggy.
