Lemon and Lavender Hamantaschen with Raspberry and Apricot Jam

What are hamantaschen?!

You ever seen those little triangular cookies with jammy centers? Those are hamantaschen! They're served for the Jewish holiday Purim, and are a real delight.

Reasons to love this recipe:

- It's easier than you'd think to make! - It uses store bought jam to make your life easier. - The dough is rolled thin for a nice cookie to jam ratio. - It's easily customizable. - It's delicious!

Ingredients:

– 3/4 cup Granulated sugar – 1 tbsp Lemon zest – 1 tsp Dried lavender – 4 oz Butter (8 tbsp) – 2 Large eggs – 1 tsp Vanilla extract – 2 1/4 cups All purpose flour (Plus extra for rolling) – 1/2 tsp Salt – 1 jar Raspberry jam (I used Bonne Mamman) – 1 jar Apricot jam (I used Bonne Mamman)
