Raspberry Elderflower Lemonade

For my first recipe of 2020, I wanted to do something light and fresh. And frankly, I’m not sure that anything fits that description better than an elderflower lemonade. This drink is loosely based off of a riff on the Bee’s Knees that I did for an Instagram collab with a few blogger friends. People seemed really interested in a mocktail version, though, so I got to work on crafting one.

The cocktail version of this drink involved gin, elderflower liqueur, honey syrup, lemon juice, and a single raspberry. This version, however, goes hard on the raspberry, nixes the gin, and subs bottled elderflower lemonade for the elderflower liqueur. They don’t really taste the same but they are both delicious. It’s the perfect drink to enjoy on a sunny afternoon with friends. Or by yourself in the middle of the night. It’s booze free so you do you!

Raspberry Elderflower Lemonade

Ingredients

  • 1/4-1/2 cup Raspberries
  • 1/4 cup Honey
  • 1/4 cup Water
  • 3 Lemons (Juiced)
  • 1 cup Sparkling Water
  • 25.4 fl oz Belvoir Elderflower Lemonade

Instructions

  • Add the water and honey to a small saucepan and cook over medium heat, stirring until combined. Then remove from heat and set aside to cool. This'll be your honey syrup, and you'll only need a little bit, but don't worry – you can keep the rest in an airtight container in the fridge for a week or so!
  • Mash anywhere from 1/4 – 1/2 cup of raspberries with 1 tbsp of honey syrup. I went hard on the raspberries, but use your judgment here.
  • Add the raspberry mixture to a pitcher. Then add the remaining ingredients, along with some ice (if you'd like). Stir it a bit, and enjoy!
