Easy Mayo-Free Artichoke Dip

When I was a kid, my mom used to make this artichoke dip that I just loved. It was always such a treat when the dip made an appearance. But one day, I asked her what was in it, and was devastated by the answer. If you know me (or read the title of this post), you can probably guess what it was. That’s right – mayo. I loathe mayo. The store bought variety, especially. I’ll never understand why people are so desperate for a moist sandwich that they’ll endure (or even embrace) such a foul substance.

For years, I’ve mourned the loss of this artichoke dip. I don’t know why it took me to long to consider making it myself, sans mayo. I sat on the idea for a while, afraid that I wouldn’t be able to conjure something that lived up to my childhood memories. But last night, I made it happen. And let me tell you, it’s goooood. Also arguably healthy since I used Greek yogurt instead of mayo. Ok, I can’t actually claim that this is a health food. It’s also got a bunch of parmesan and cream cheese in it. Honestly, though, that’s irrelevant. It’s a party food – you’re not gonna eat a ton of it, it’s fine.

Now, I realize that this would’ve been a perfect Super Bowl recipe. But hear me out – I avoid football at all costs. So it wasn’t until I got jealous of everyone else’s Super Bowl snacks that I caved and made one of my own. Luckily, the Oscars are next weekend, so there’s still a perfectly valid excuse for you to make this dip.

Easy Mayo-Free Artichoke Dip

Ingredients

  • 1 14.5 oz can Artichokes (rinsed, drained and quartered)
  • 1 1/4 Cups Grated parmesan cheese
  • 4 oz Cream cheese (cut into chunks)
  • 1 Cup Greek yogurt
  • 1/2 Tsp Salt
  • 1/4 Tsp Freshly ground black pepper
  • 3 Cloves Garlic (minced)

Instructions

  • Preheat your oven to 375° F. Then set aside 1/4 cup of grated Parmesan and combine all the remaining ingredients in a large bowl and mix with a spatula until combined.
  • Transfer to a baking dish of your choice, and sprinkle the reserved cheese on top. Now pop it in the oven for about 20 minutes. Finish it off by broiling it on high for 3-5 minutes or until sufficiently bubbly and golden.
  • Let the dip cool a bit (you don't want it scalding anyone) and then enjoy with whatever dippers you'd like! I went with whole wheat pita chips, baby carrots, and celery sticks.

    Even I, your mom, would love to try this! We do love the artichoke dip and Greek yogurt is often used in place of mayo. Good idea to substitute!
