I’ve always been a fan of the frozen chocolate covered banana. But if I’m being honest, a full banana is a lot to commit to. It’s hard to eat, and usually more than I want. Plus, the chocolate to banana ratio is all out of whack! But these frozen chocolate covered banana bites are absolute perfection.
They’re ridiculously easy to make, and the perfect treat to counter stifling summer heat. I’ll likely eat the batch I made for this post in the next two days. But you won’t catch me without some of these bbs in my freezer for the rest of the summer.
Note: I used a double boiler here. If you don’t have one, fear not. You don’t have to go and buy one. You can totally just rest a heat-proof bowl atop a pot of boiling water to achieve the same result!
Frozen Chocolate Covered Banana Bites
Ingredients:
- Water (as needed for double boiling)
- 3 large bananas, sliced
- 1 cup dark chocolate chips
- 2 tbsp coconut oil
- 1/4ish cup baked coconut chips, crushed
- Parchment paper
Directions:
- Add some water to the base of your double boiler and heat on medium. When it starts to boil, add the top pot along with the chocolate chips and coconut oil and stir to combine the two ingredients as they melt.
- Once the chocolate and coconut oil have melted, throw a few banana slices into the pot and spoon some chocolate over them. Remove the slices with a spoon and place them on some parchment paper. Repeat as necessary until all the banana slices are sufficiently chocolatey, and then sprinkle some crushed up coconut chips on top.
- Transfer the bananas to the freezer for a couple of hours, then enjoy! (Also, if you want to remove any excess chocolate, you can do so with a knife. I like the extra chocolate treat, though.)
