Easy Air Fryer Grilled Cheese with Peach, Brie and Rosemary

I remember the day I realized I could use my air fryer to make grilled cheese like it was yesterday. During my lunch break, I went to turn the stove on to make it the old fashioned way, but alas, there was no gas. I started to panic, because pregnant and hungry. Plus I had nothing else to make for lunch. Especially not in the 30 minute window that I had to both make and eat it. And then I spotted my air fryer. I thought why the hell not and threw the sandwich in there for a few minutes. Lo and behold, it emerged grilled cheese perfection. The bread was wonderfully crispy without being burnt, and the insides even and gooey. Plus, it felt sufficiently moist without being absolutely covered in oil. I may never make a grilled cheese any other way!

Obviously, after a revelation this huge I had to experiment. Most of my grilled cheese creations involved a slightly gross keto bread, apples, roasted garlic mustard, and sharp cheddar. They were pretty good despite the weird, gummy bread. But on one occasion, I crafted the greatest of all grilled cheeses. And I even used real bread. Freshly baked sourdough, to be exact. It also involved brie, rosemary, and peaches. Lemme tell you, it was heaven between two slices of bread.

As is the case with any simple recipe, ingredients matter. This magical sandwich won’t taste quite as heavenly if you don’t use good bread. Preferably something thick and crusty, like sourdough. And don’t you dare go throwing canned peaches into this bad boy. Fresh ingredients only, please and thank you!

Easy Air Fryer Grilled Cheese with Peach, Brie and Rosemary

Equipment

  • Air Fryer

Ingredients

  • 2 slices Sourdough bread (Or another crusty bread)
  • 6 slices Brie cheese
  • 1 Large peach (Sliced)
  • 1 tbsp Chopped rosemary
  • 1 tbsp Olive oil
  • Ghee spray (optional)

Instructions

  • Combine the rosemary and olive oil in a small container.
  • Spray both sides of the bread with ghee (or another cooking spray) if desired. Then slice them in half. (It'll be easier to eat this way.) Add three slices of brie to two of the halves.
  • Drizzle rosemary and olive oil (as much as desired) over the cheese slices. Then top with as many peach slices as you'd like, and close up the sandwiches.
  • Pop the sandwich in your air fryer for 5-7 minutes at 350° Fahrenheit. Once it's done, the bread should be nice and crispy, and the cheese perfectly gooey. If you're not satisfied, put it in for a couple more minutes, then enjoy!
