This luscious blueberry pie gin sour is the perfect cocktail to bridge summer and fall. It’s got juicy summer berries, but also a touch of warming cinnamon that mingles beautifully with gin’s botanical flavor profile. Oh, and some sour lemon for good measure. It’s also got the most beautiful color without any fancy ingredients! A real winner in my book.
So what’s in this blueberry pie gin sour?
Though it doesn’t sound it, this drink is actually quite simple! It’s just got a few ingredients (and if you’re anything like me, they’re ones you might already have at home).
- Blueberry cinnamon simple syrup (ok, you’ll have to make this but it’s literally just blueberries, a cinnamon stick, water and sugar)
- Gin
- Lemon juice
- Egg white or aqua faba
Why is it called a blueberry pie gin sour?
Just to clear up any confusion, there’s no actual pie in this drink. I decided to call it a blueberry pie gin sour because it’s got the same flavor notes as a blueberry pie (sans crust)! We’re talking blueberry, cinnamon, sugar and lemon. Sounds like blueberry pie to me but if that’s not enough for you, drink it alongside actual blueberry pie and call it a day.
How do I make the blueberry cinnamon simple syrup?
If you’ve never made simple syrup before, don’t worry – it’s extremely easy. This one is equal parts blueberries, water and sugar, plus a single cinnamon stick. All you need to do is add them all to a small saucepan and simmer for about 10 minutes, or until the sugar has completely dissolved and the blueberries have softened and burst. You can help them along by squishing them with a spatula. Then, strain through a fine mesh sieve and transfer to an airtight container.
As for ratios, I used a half cup of blueberries, water and sugar. I knew I wouldn’t be needing too much syrup, so that worked great for me. It yielded about 6 ounces of syrup, which is enough for 6 cocktails. If you need more, feel free to scale up! The syrup should last about 2 weeks in the fridge (or about 3 months in the freezer), so plan accordingly.
How do I get a foam top like the one in your pictures?
To get a foam top like the one I’ve got, all you need is a single egg white or an ounce (2 tbsp) of aqua faba, which is the water from a can of chickpeas. Add it to your cocktail shaker along with all the other ingredients and some ice and shake vigorously! When you pour it into your glass, you’ll have a lovely foam top.

- 1/2 cup Blueberries
- 1/2 cup Granulated sugar
- 1/2 cup Water
- 1 Cinnamon stick

- 1 Egg white or 1 oz aqua faba
- 2 oz Gin
- 1 oz Blueberry cinnamon simple syrup
- 1 oz Lemon juice
- Ice
Garnishes (optional)
- Lemon twist

Instructions
Blueberry cinnamon simple syrup
- To make your blueberry cinnamon simple syrup, add the blueberries, cinnamon stick, granulated sugar and water to a small saucepan and cook on medium heat until it reaches a simmer. Then lower the heat to keep it at a simmer rather than letting it get to a boil.
- Let it simmer for about 10 minutes, or until the berries have burst and the sugar has dissolved.
- Remove from heat and allow syrup to cool for a few more minutes before straining through a fine mesh sieve into a glass jar. Store in the fridge for up to two weeks.
Blueberry Pie Gin Sour
- Add ice, egg white or aqua faba, gin, blueberry cinnamon simple syrup, and lemon juice to a cocktail shaker and shake vigorously. If you're using a metal shaker, you'll want to shake until the shaker looks frosty. Then pour into a coupe glass and garnish with a lemon twist or a cocktail pick with blueberries and enjoy!
