I live for a good tomato sandwich in the summer. Not the tomato, mayo and white bread variety. No, it’s got to be bursting with summer produce and either a mozzarella or burrata. I don’t make the rules here, that’s just how it has to be. This summer, I can’t stop eating this tomato, peach and burrata sandwich. It’s on a baguette and it’s also got yuzu kosho and fresh basil. It takes about 5 minutes to throw together and is so simple, but so good.
What’s burrata and where can I get it?
Burrata is essentially a ball of mozzarella cheese with a gooey stracciatella (mozzarella and heavy cream) center. It’s extremely delicious and great in a sandwich. You can buy burrata at most grocery stores nowadays. That said, I like to get mine from Trader Joe’s because it’s priced really well there.
Ok, now what’s yuzu kosho and where can I get that?!
Yuzu kosho is a lightly fermented Japanese seasoning made from chiles, yuzu peel and salt. If you’ve never tried it, now is the time. It’s spicy, citrusy, salty, and such a lovely addition to a meal. It really makes this sandwich sing. As for where to get it, I usually buy this red and green duo from Amazon. The green is my favorite, but you can use either here. I also noticed that Trader Joe’s sells yuzu kosho now! The price was impressive based on the size of that jar but I didn’t end up buying it so I can’t vouch for it. If you try it you’ll have to leave a comment and let me know how it is.
A note on baguettes
Not all baguettes are created equally. If you plan on packing this sandwich for a picnic or or work lunch you’ll need to be mindful of what kind of baguette you use. When saving this sandwich for later, a crusty baguette (the kind you’d get at a bakery) is best. Honestly, a crusty baguette is always best but the flimsy grocery store variety will do in a pinch if you’re eating it immediately. This tomato, peach and burrata sandwich contains a lot of wet ingredients so if the bread is on the softer side it’ll get pretty soggy.
Ingredients and process
Look, the process for this recipe is very simple. It’s a sandwich, after all. You layer ingredients onto a slice of bread and then put another slice on top. Viola! I will say that I wrote this recipe for two sandwiches because a half a tomato, half a peach, and half a 20 inch baguette are perfect for one sandwich so you may as well use the excess to make another sandwich! If you only need one sandwich, it’ll be ok. Just halve the ingredients and put the rest in the fridge for later.
That said, I do want to let you know that for certain ingredients like yuzu kosho and basil you can feel free to add as much or as little as you’d like. Especially the yuzu kosho. Try it first! It’s a little bit spicy and very salty, so you want to make sure you don’t overdo it. I added about a half a teaspoon to each sandwich, but you can adjust as you see fit.
